Caccia al Piano - Grottaia Vermentino di Bolgheri

Technique: Harvested by hand into 15kg crates, the grapes were placed intact in the press where they underwent a soft squeezing.  The must obtained was transferred to a stainless steel box to undergo alcoholic fermentation at a controlled temperature of 12-14°C for two weeks. Finally, the wine was aged on its lees for a few months before bottling, which takes place in the spring following the harvest.

The 2021 vintage was characterized by a moderately rainy winter with a rather high temperature trend, at least in the maximum temperatures compared to seasonal averages. which therefore led to an earlier budding. Spring gave us a few sporadic days of rain between April and early May, rain that will only reappear in September. The summer was therefore hot and dry, which allowed for an excellent healthiness of the vineyard ecosystem and an early harvest of great quality.
