Early hand-picked grapes. Crushing and maceration for 3 hours, pressing, static clarification and start of alcoholic fermentation at 15°C. At the end of the fermentation process, the wine is racked to separate it from the lees. Maturation on yeast with 'batonnage' every 10-12 days; filtration and bottling.

Analytical data: Residual sugars: 0,6 g/l. Total acidity: 5,3 g/l. Total sulphur dioxide: 110 mg/l.
