Training system: Cordon.

Technique: Fermentation at 22-25°C for 12 days in stainless steel 316 containers.  Refining method and period before bottling: 12 months in stainless tank, in oak casks no less than 24 months and 12 months in the bottle.

Production Area: Montemiletto, Irpinia, Campania.

Type of Soil: Medium mix tending to clay.

Exposure: South-East.

Altitude: 450m asl.

Grape Harvest: from the end of October to the beginning of November.

Age of Grapevines: 20 years.

Roast meat, game and aged cheese.
