Guyot and Cordon. The Red Volpaio is produced exclusively from grapes grown on the estate located on the slopes of Montalbano in the town of Vinci. Our vineyards are divided into many plots distant from each other, each with its own characteristics. The selected grape hails from all of these areas, making it the ultimate expression of the territory, in a mix of indigenous red grape varieties that belong exclusively to the terroir where they have always been cultivated in the typical Tuscan tradition.
The fermentation and maceration were conducted in stainless steel tanks thermo-conditioned for a period of about 10-15 days at a temperature of 28°- 30°C. The malolactic fermentation took place in stainless steel tanks and is completed by the end of the year. The wine was racked and put into cement tanks where it aged for 6-8 months, after which it was bottled for a further ageing of 4-6 months.
