Guyot/sylvoz. The grapes are de-stemmed, then the must is cryomacerated for 48 hours and pressed gently. Fermentation in temperature-controlled tanks followed by brief lees contact and maturation. Maturation in steel. Bottle ageing: 2-3 months.
