Chardonnay (100%)
Technique: the immediate and soft pressing of the grapes allows for the free-run must which, brought to an adequate clarity by simple decanting, will ferment at a controlled temperature (16 - 18 degrees Celsius). Once the wine is obtained, it will undergo decanting several times and only in Spring will it be bottles for the second fermentation. The wine then rests in the cellar for 24 months and is available for purchase after a number of months following that.
Time of harvest: obsessive attention is paid to the choice of the harvest day, taking into account various parameters that are useful for determining the best quality of the wine. The same attention is paid to the grape harvest so that the grapes are delivered, intact, as quickly as possible to the cellar.
Production area: Corte Franca (BS).
Soil structure: deep moraine, sandy loam texture on the surface, clay loam in depth.
Grape variety: 100% Chardonnay.
Training system: spurred cordon, guyot.
Average age of the vines: 20 years.
Average grape yield per hectare: max. 90 quintals per hectare.
Harvest: manual in 16 – 18 kg boxes.
Alcohol Content: 12.5% vol.
Maturation and refinement: the Satèn typology rests in the cellar for at least 24 months before disgorging and is placed on the market only after further months of rest in the stacks.
Organoleptic profile: silky foam, delicate but well defined. Rather soft and elegant, vegetal-herbaceous aroma, yeasty with hints of pome fruit, citrus and floral traces. Light fruit, apple with a slight sour note. Fine and persistent bubble, barely perceptible dosage, long-lasting, slightly salty, with an ethereal and spicy touch in the background.
