Nerello Mascalese and Nerello Cappuccio
Technique: Long maceration with the skins at a controlled temperature, spontaneous malolactic fermentation in stainless steel and aged in 500 and 1500-litre barrels of French oak. Bottling after 24 months of ageing in wood. Moderate ageing in oak barrels and then in the bottle for 12 months.

Soil Type: Breeding and Espalier tree on sandy, volcanic soils arranged in small terraces. There are vast fluctuations in temperature from day to night.
Harvest: Manual in early October. 70-80 quintals per hectare yield. Age of vines is 14-80 years.
