Technique: soft pressing, cold settling, fermentation in stainless steel at controlled temperature (14-15 °C) for at least 20 days. Refinement in stainless steel for a few months. After the transfer, the ageing lasts a few months on the lees and then bottled.

Altitude: 400m above sea level

Vineyard Exposure: East

Soil Type: Breeding and Espalier tree on sandy, volcanic soils arranged in small terraces. There are vast fluctuations in temperature from day to night.

Harvest: Strictly by hand.  80 quintals per hectare yield, average age of vines four years.
