Sangiovese, Cannaiolo
Technique: Palmet, or fan pruning, with spring cluster thinning and organic farming methods without the use of pesticides and herbicides. Soft pressing, free-run juice fermented in stainless steel at controlled temperature. The careful vinification of Sangiovese and Canaiolo red grapes, combined with a very long fermentation period at controlled temperature make this a fresh and full-bodied wine.
